Crunchy Popcorn Cauliflower
INGREDIENTS:
- 1 cauliflower, cut into small florets
- 1 egg
- 1-cup panko breadcrumbs
- ½ cup finely grated parmesan
- 1 tsp smoked paprika
- 2 tsp coarsely chopped thyme sprigs
METHOD:
- Preheat oven to 200c. Line a baking dish with bake paper.
- Cook the cauliflower in a large saucepan of boiling water for 5 minutes or until just tender. Drain well. Transfer to a large bowl. Stir in the egg.
- Combine the breadcrumbs, parmesan, paprika & thyme in a large bowl. Add the cauliflower mixture & toss to combine. Arrange the mixture in a single layer over the lined tray. Spray well with olive oil spray.
- Bake, turning occasionally, for 20 minutes or until the cauliflower is golden brown & crisp. Serve warm.

Mini Almond Loaf
Makes 6 mini loafs
INGREDIENTS:
- 2 cups Blanched almond flour
- 1/4 cup Psyllium husk powder
- 1/2 tsp Sea salt
- 4 large Eggs (beaten)
- 1/4 cup Coconut oil (measured solid, then melted)
- 1/2 cup Warm water
METHOD:
- Add all the dry ingredients to a bowl and make a well in the center.
- Add the beaten eggs, warm water, and melted coconut oil.
- Mix together with a wooden spoon until combined.
- Place mixture evenly into 6 mini loaf tins.
- Bake for 15 minutes on 180 degrees or until risen and golden.
- Skewer to make sure it's cooked through.

Low Carb Protein Pancakes
(4 small per serve)
INGREDIENTS:
- 75g Full fat cream cheese
- 2 Eggs
- 1 Scoop of Pea Protein powder
- Shake of cinnamon
METHOD:
Blend all ingredients together and refrigerate for a couple of hours.
Serve with Greens Sugar-Free maple syrup and cream.
