Marinated Beetroot
INGREDIENTS:
- 5 beetroot around the same size
- 1/2 cup brown vinegar
- 1/2 cup water
- 1/4 cup sugar
- 2tsp whole cloves
- pinch sea salt
METHOD:
- Place beetroot in a saucepan and top with water. Allow to boil until you are able to place a skewer easily through the center of the beetroot.
- Cool the beetroot in cold water until warm & able to handles. Remove the skin off the beetroots with your hands. It should just come away. (gloves may be worn as it can stain your hands)
- Slice beetroot and place in a tub. (I use the Tupperware beetroot keeper)
- In a saucepan, add the brown vinegar, water, sugar, salt & cloves. Allow this to boil while stirring. Once it has boiled, pour the juice over the beets while it is still hot. Make sure it covers all the beetroot. (Depending on how big your beetroot is, you may need to double the juice recipe.)
- Allow to cool on the bench with the lid off before putting it in the fridge.

Homemade Pickled Cabbage
INGREDIENTS:
- ¼ red cabbage
- ½ cup apple cider vinegar or red wine vinegar (120ml)
- ½ cup water (120ml)
- 1tbs sugar
- 1 clove garlic, crushed
- 1tsp sea salt
- ¼ tsp ground black pepper
- Cut: Remove the core from the cabbage then shred with a knife.
- Pickle: Add cabbage to a large airtight glass jar or bowl, along with all other ingredients. Seal jar and shake, or simply stir bowl and cover. Set on the counter for at least 2 hours (up to 6), shaking/stirring occasionally.
- Store tightly sealed in the refrigerator for 2 to 3 weeks.
- Serve as salad, in wraps, tacos or burgers.

Homemade Healthy Nutella
INGREDIENTS:
- 2 cups dry roasted, unsalted hazelnuts
- 2tbs coconut oil, (melted and cooled)
- 2/3 cup cacao or cocoa powder
- 7 dates (soaked)
- ½ cup pure maple syrup
- ½ cup almond milk (+ more if needed)
- ½ tsp vanilla (optional)
- Pinch of salt
METHOD:
- Add hazelnuts to a high-powered blender or food processor (one that’s capable of making nut butter). At first it will be powdery like almond flour, stop machine to stir and scrape down sides then continue blending and repeat until smooth and creamy like peanut butter.
- Next add the remaining ingredients and blend/process until smooth and creamy. (add more almond milk if needed to thin out)
